"Why hello, nice to meet you" translated into dog language is pretty much done via nose to rear-end. Pretty strange custom right? I mean if you met someone new of the human-kind and the first thing they did was sniff your lower regions you'd likely run away, maybe even call the cops.
So why do dogs do it? Let's break it down scientifically.

Dogs Sniffing

Depending on the breed, a dog's sense of smell is somewhere between 10,000 (pugs) to 100,000 (blood hounds) times stronger than humans. So when they are inhaling the scent of a new acquaintance its pretty much like checking out their online dating profile. Communicating through chemicals they can learn about each others eating habits, gender, sexual status, temperament, all kinds of things.

I'll tell you what, if my girlfriend would have been able to smell-out my eating habits before we started dating, I'm not sure I would have even made it to date two. Much like a dog I have a tendency to eat until all available food in front of me has disappeared, and then often follow that up with an "are you going to finish that?" about whatever's left on her plate.

Dogs have a secondary olfactory system in their nose called Jacobson's organ that sends chemicals messages directly to the brain. This explains why things that we think smell revolting, like say dog poop for example, dogs can't get enough of. It's not nausea they're breathing in, its information.
